Healthy.. kinda sorta.. PHO

Tis is the season for soup as well as anything to warm us up! I’m a huge fan of PHO but I do know there’s added sodium and generally, I like to eat things that are a little cleaner! This isn’t the real deal but it cuts it close! And you can add your own stuff based on what you like. Here’s whatcha need: 2 cups vegetable broth 2 cups water  2 cups chopped veggies (your choice) I chose.. green onion, green beans and mini carrots  1 tsp amino acids  1 tsp chili powder  1 tsp garlic (minced)  Rice pad Thai noodles  Sriracha   Pinch of salt  Whatcha do: Bring broth and water to a boil  Add salt and spices, garlic  Add veggies and boil for 5 minutes Add noodles and boil for 2 minutes Serve and top with sriracha Enjoy!

Thanksgiving power bowl

Whatcha need: Plan Greek non fat yogurt, 3/4 cups  Organic apple spice granola, 1/2 cup  Small organic apple chopped, 1/2 cup  Almond butter, 1 TBSP  Cranberries, 1 TBSP Apple spice, sprinkle (or two)  Honey, drizzzle  Mix all ingredients in a bowl and EAT IT!  For those who use the portion control container system: 1 Red  1/2 purple  2 TSP  1/2 yellow  Free foods, MANY!!

3 day cleanse results

Woke up after 3 days of small meals. 3 superfoods shakes and I feel GREAT! The Halloween bloat is gone. I feel energized and more importantly, I'm not craving a bunch of crap 🙌🏽 I dont weight myself so I do not know the actual progress on a scale but the bloat is gone for sure! Here's what I ate daily: Breakfast: Serving of fruit and a vegan chocolate shakeology. Mid morning: Fiber sweep (you get use to it) Lunch: Serving of vegetables, fruit and health fat along with a superfood shake. Snack: Serving of vegetables and healthy fat. Dinner: Vegetable stir-fry with spices and vegetable broth. Superfoods shake. Questions I received: 1. Can you workout? It's not recommended because of the amount low caloric intake but you can do yoga. 2. Can you have coffee? If you must, but it needs to be black. You can have green tea though. 3. What is the cost. FLOURLESS DARK CHOCOLATE PUMPKIN MUFFINS

INGREDIENTS: 1 cup pumpkin puree 1/2 cup pure maple syrup 2 eggs 1 tablespoon vanilla extract 4 tablespoons almond butter* 1/4 cup unsweetened vanilla almond milk 2 and 1/4 cup rolled oats 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon cinnamon 1/2 cup dark chocolate chips DIRECTIONS: Preheat the oven to 350°F and then grease or line a muffin tin for 12 muffins. Starting with the wet ingredients first (pumpkin, maple syrup, eggs, etc.) layer everything except the chocolate chips into a blender or a food processor and blend for about 30 seconds, or until smooth. Using a spoon, gently stir the chocolate chips into the batter. Pour the batter into the muffin tin, filling each about 3/4th of the way full. Bake in the oven for 22 minutes, until light golden brown. Allow to to cool for at least 10-15 minutes before stuffing in your face.

Meal prep Sunday

Throughout the summer months I've been trying to keep my meal plans pretty similar do to the summer festivities. Here is my go to summer meal plan with breakfast-afternoon snack time, so I can keep it dialed in with tons of flavor: Breakfast: 1 scoop vegan vanilla Shakeology 1/2 cup frozen blueberries 1 cup spinach 10oz of water Ice Blend and do Snack: Plain green yogurt 1/2 cup frozen strawberries Toasted coconut Cinnamon Lunch: Ground turkey and chicken burgers with chopped zucchini, onion and spices Parmesan crusted green beans Brown rice Snack: Egg cups With 2 eggs, peppers, geeen onion and sprinkled cheese Dinner changes each night but I mostly do meat and veggies with a glass of wine 😉

Strawberry Frozen Yogurt Bites

Strawberry Frozen Yogurt Bites Prep Time:   15 minutes Total Time:   36 minutes Servings:   6 Servings Ingredients: – ½ cup finely chopped raw almonds – 1 tbsp. coconut sugar – 1 tbsp. extra-virgin organic coconut oil  melted – ½ tsp. ground cinnamon – ¾ cup reduced-fat (2%) plain Greek yogurt – 2 tbsp. raw honey – 1½ cups finely chopped fresh strawberries Instructions: 1) Prepare 6 muffin cups by lining with silicone or parchment cupcake liners. Set aside.   2) Combine almonds, sugar, oil, and cinnamon in a small bowl; mix well.  3) Divide almond mixture evenly between muffin cups. Set aside. 4) Combine yogurt and honey in a small bowl; mix well. 5) Evenly top almond mixture with yogurt mixture and strawberries.  6) Freeze for 6 hours, or until firm. 7) Remove from cupcake liners to serve. 

Plantain pancakes

WHOLE 30 APPROVED!!  Ingredients • 1 large plantain, peeled • 2 eggs • 1 tsp vanilla • ¼ tsp baking soda • 1/8 tsp salt and sprinkle of cinnamon  • Coconut oil for cooking Instructions Place the plantain, eggs, vanilla, baking soda and salt in your blender. Blend until you have a smooth batter. ** If the plantain is hard to peel, try making a slit in the peel lengthwise, followed by slicing it into thirds. This makes the peeling process much easier. Melt the coconut oil in a pan over medium heat. Once the oil has melted and the pan is hot, use 1/3 measuring cup to pour the batter onto the pan. Cook until the bottom edges of the pancake are golden brown, then flip the pancakes and cook the other side for 1-2 minutes, or until the pancakes are cooked through. Serve with your favorite breakfast sausage and side of fruit!
