PUMPKIN CINNAMON GRANOLA


Hey all! I am a HUGE fan of granola in my yogurt, especially if it is homemade!

Its great as a healthy alternative and great go on the GO!



INGREDIENTS:

3 cups rolled oats
1 cup chopped nuts
½ cup coconut flakes
½ teaspoon salt
1½ teaspoons cinnamon
1 teaspoon pumpkin pie spice
½ cup honey
⅓ cup coconut oil
2 teaspoons vanilla extract
3 tablespoons pumpkin puree

INSTRUCTIONS:

Preheat oven to 325 and lightly grease a large baking sheet with coconut oil (Preferable one with a raised edge)

In a large bowl combine oats, nuts, coconut, salt, cinnamon, and pumpkin pie spice.In another bowl whisk together honey, brown sugar, oil, vanilla, and pumpkin.

Pour the wet mixture mixture over the oats mixture and stir to coat well. Spread the mixture onto the baking sheet in an even layer and bake 15 minutes, stir, and continue to bake in 10-15 minutes intervals, stirring well between each, until the granola is uniformly golden and no longer moist (for me this was a little over an hour but it will depend on your oven).
Allow to cool completely (the granola will crisp a little more as it cools.) Store completely cooled granola in airtight containers for 1-2 weeks.

Gluten free dessert quesadilla

I have the biggest sweet tooth! I try to keep it gluten free but bring on the DARK chocolate ✔️✔️  2 corn tortillas  1 tablespoons dark chocolate chips  1/2 banana sliced  1 tsp of coconut sugar  1 tsp butter (spray butter)  Two pumps of spray butter on pan Place corn tortillas on pan and sprinkle half of the coconut sugar with sho plate chips on one side of tortilla  Place sliced bananas on top and add remaining ingredients and place other tortilla on top.  Take a spatula and press firmly on quesadilla, flip and repeat!  Slice and enjoy!  For those doing the 21 day fix:  1 yellow  1 purple  2 tablespoons  The sugar is technically a "cheat" but let's get real ;) 

Summer ChickPea Salad

Dressing: 1/8 cup seasoned balsamic vinegar 1/2 olive oil  1/2 teaspoon fine grain sea salt Salad: 2 medium field cucumbers 1 red pepper, diced 1/2 cup diced red onion 1/4 cup roughly chopped cilantro 1/4 cup chopped roasted peanuts, for garnish 1 cup cold drained chickpeas  1. Whisk dressing ingredients together in a small bowl and adjust to taste. Set aside. 2. Quarter cucumbers and place into a bowl.  3. Dice the red pepper and red onion and add into bowl. Roughly chop cilantro and add into bowl. Pour in all the dressing and toss to combine. Let this salad sit for about 30 minutes in the fridge, tossing every 10 minutes or so to help the dressing soak in. Add chick peas :)  4.keep refrigerated and enjoy!

Posting on social media is intensity terrifying BUT I am reading two books right now that are nailing down some good points, GoPro by Eric Worre and the Compounding Effect by Darren Hardy. GoPro is teaching me so much on social networking marketing, the power of taking initiative using social media, and how it can devolope what you want. Personally this is perfect for me to dive into, being a new beachbody coach I want social media marketing to be the core of my business! It's teaching me to have NO shame and do what I have to do to get where I want to be!  Compound effect is teaching me to bit the bullet and GO, but to think while I do it, take chances but know what chances I am taking. "What you think about you bring about!" If you want something then make goals, focus on the positive and make sure you check in with yourself everyday!  My goals for this week is to blog 3-5 times a week, make sure I'm posting 3 times a day on social media and NETWORK!!!
