Coffee updates! FOOD CRAVINGS

Yesterday I posted about spicing up your coffee and I had a hit this morning by putting coconut oil in my coffee and with dairy free coconut creamer. It was seriously delightful! Not to mention its great for you, it has been said that if you consume coconut oil your metabolism increases throughout the day! Try it :) Let me know if you have done this before.

Also, I found this interesting! I crave foods that I should not be eating ALL the time, this list totally makes so much sense. I will give it a try and let you know what I come up with. I crave sugar mostly so I really need to dial it in on what to put in my body when this happens. Normally, wine does the trick but does that count as fresh fruit ;)

Fluffy Gluten Free Waffles

Ingredients 1-1/2   cups   Gluten Free All Purpose Baking Flour 2   tsp   Baking Powder 1/2   tsp   Baking Soda 1/2   tsp   Salt 1   Tbsp   Sugar   or 1/4 tsp Stevia 1   Tbsp   Oil 3/4   cup   Milk 4     Eggs   separated 1   tsp   Vanilla Extract Instructions Pre-heat a waffle iron. In a large bowl, mix the flour, baking powder, soda, salt, and sugar together. In a separate bowl, whip the egg whites until they form stiff peaks or resembles whipping cream. In a small bowl, whisk together milk, yolks, vanilla, and oil. Add the milk mixture to the dry ingredients and blend together. With a rubber spatula, slowly fold in egg whites with the rest of the ingredients. The entire mix should be light and fluffy. Spray waffle iron and begin making waffles. Follow the waffle machine instructions or cook about 3 minutes on each side.

Sweet potato chili

This here I will be making tomorrow night for dinner and I CANT WAIT!!!  Sweet potato chili (vegetarian can be done as well)  Ingredients: 2 cans diced tomatoes (low sodium if you can find it)  2 cans tomato sauce (low sodium if you can find it)  1 tsp chili powder 1 tsp cayenne pepper 1 tablespoon ground cumin 2 teaspoons paprika 1/2 teaspoons agave  1/2 teaspoon salt 2 large sweet potatoes, peeled and chopped into 1” pieces 1 medium onion, coarsely chopped 2 cloves garlic, minced 2 cans kidney beans, drained; or 3 cups cooked kidney beans (start with 1.5 c dry beans, soak overnight) 1 cup corn, frozen and thawed 1 lbs ground beef sirloin (optional) 1 cup low sodium chicken broth Instructions: ~If using cooked beans, soak 1.5 cups kidney beans overnight, rinse and pre-cook while preparing the rest of the chili. ~Roast the corn until most pieces have a dark/charred corner, either in your slow cooker, if it has that function, or on the stove top. 2B Mindset

4 years ago.. a spin instructor, overworking out and under eating. I was put on medications for the lack of nutrition. I struggled with binge eating, smoke to lose weight and had a terrible relationship with food!  All the years of restricting myself or overeating caught up with me.
