Heathy taco Tuesday!

Taco Tuesday is healthy MUST in my household!! Super easy and tastes BOMB! Try it with any type of meat or rice option!  INGREDIENTS 1½ c. dried quinoa 3 c. water 1 southwestern seasonings: 1 tbsp. chili powder, 2 tsp. ground cumin, 1 tsp. coriander, 1/2 tsp. onion powder, 1/2 tsp. garlic powder, 1/2 tsp. dried oregano, 1/2 tsp. smoked paprika 1 tsp. sea salt  Lean ground turkey *optional*  1/2 zucchini, chopped finely  1 (14 oz.) can black beans, drained and washed  8 oz. of corn, drained and washed  4 oz skin cheese of your choice, optional 3 c. chopped lettuce 1-2 tomatoes, chopped 1 avocado, chopped 1/2 onion, diced  1 small can sliced black olives, drained sour cream: 1/4 cup of greek yogurt mixed with salsa or pico, splash of lime juice.  2 limes  INSTRUCTIONS Cook quinoa according to package instructions. Ginger lemon bakes chicken!

1/4 cup olive oil 2 cloves of garlic, minced 2 whole lemons, one juiced and one sliced 1/4 cup minced ginger  1 teaspoon garlic powder  1 teaspoon onion powder ground pepper to taste  4-6 chicken breasts, wash and pat dry  1 medium onion (any kind), thinly sliced 1 tsp thyme  1 tsp rosemary  DIRECTIONS: Preheat oven to 400 degrees F. In a small bowl whisk together olive oil, garlic, lemon juice, garlic powder, onion powder, pepper and ginger.  Place chicken in a rimmed 13-in. x 9-in. baking dish ( add any veggies that you would like too). Place parts skin side up and spread them out evenly in the pan. Pour olive oil mixture all over chicken, turning pieces to coat all sides. (If you marinated the chicken in this mixture, still add it all in). Arrange slices of lemon and onion around and under the chicken. How many calories are you putting in your coffee?

Bottom line, your saving TONS of calories by switching to either black coffee or coffee with unsweetened almond milk! Refer back to my blog about ways that I flavor up my café :) Think about it: 20 calories per tablespoon of half & half and 16 calories per tablespoon of sugar.... SO, if you have 2 cups of coffee a day with 2 TBS of half & half and 1 TBS of sugar 7 days a week, that is 784 calories!!! If you have 3 cups a day, you are looking at 1,176 calories.. YIKES Lets replace your fixin's with unsweetened almond milk! 4 calories per 2 TBS equals to 56 calories per week if you drink 2 cups a day!
