CAULIFLOWER PIZZA!

Ingredients:

1 cup cooked, riced cauliflower
1 cup shredded mozzarella cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt
olive oil (optional)
pizza sauce, shredded cheese and your choice of toppings*

Directions:

To "Rice" the Cauliflower:
Take 1 large head of fresh cauliflower, remove stems and leaves, and chop the florets into chunks. Add to food processor and pulse until it looks like grain. Do not over-do pulse or you will puree it. (If you don't have a food processor, you can grate the whole head with a cheese grater). Place the riced cauliflower into a microwave safe bowl and microwave for 8 minutes (some microwaves are more powerful than others, so you may need to reduce this cooking time). There is no need to add water, as the natural moisture in the cauliflower is enough to cook itself.
One large head should produce approximately 3 cups of riced cauliflower. The remainder can be used to make additional pizza crusts immediately, or can be stored in the refrigerator for up to one week.
To Make the Pizza Crust:
Preheat oven to 450 degrees. Spray a cookie sheet with non-stick cooking spray.
In a medium bowl, stir together 1 cup cauliflower, egg and mozzarella. Add oregano, crushed garlic and garlic salt, stir. Transfer to the cookie sheet, and using your hands, pat out into a 9" round. Optional: Brush olive oil over top of mixture to help with browning.
Bake at 450 degrees for 15 minutes.
Remove from oven. To the crust, add sauce, toppings and cheese. Place under a broiler at high heat just until cheese is melted (approximately 3-4 minutes).
Enjoy!
*Note that toppings need to be precooked since you are only broiling for a few minutes.

2B Mindset

4 years ago.. a spin instructor, overworking out and under eating. I was put on medications for the lack of nutrition. I struggled with binge eating, smoke to lose weight and had a terrible relationship with food!  All the years of restricting myself or overeating caught up with me. I was left exhausted, depleted and desperate.   But, 4 years ago, I learned how to turn food into fuel so I could FEEL better and live my best life. I used portion control and clean eating to go off medications and have a better relationship with food BUT still have struggled with the scale and balance.  NEXT WEEK, I learn how to take all of those negative cognitions around food and remove them from my life... for good.  The 2B Mindset Weight Loss Program, coming May 2, 2018, is a breakthrough weight loss program that will have you feeling full and satisfied not hungry and deprived. No more counting calories, points, measuring food or cutting food groups. You g...

3 day cleanse results

Woke up after 3 days of small meals. 3 superfoods shakes and I feel GREAT! The Halloween bloat is gone. I feel energized and more importantly, I'm not craving a bunch of crap 🙌🏽 I dont weight myself so I do not know the actual progress on a scale but the bloat is gone for sure! Here's what I ate daily: Breakfast: Serving of fruit and a vegan chocolate shakeology. Mid morning: Fiber sweep (you get use to it) Lunch: Serving of vegetables, fruit and health fat along with a superfood shake. Snack: Serving of vegetables and healthy fat. Dinner: Vegetable stir-fry with spices and vegetable broth. Superfoods shake. Questions I received: 1. Can you workout? It's not recommended because of the amount low caloric intake but you can do yoga. 2. Can you have coffee? If you must, but it needs to be black. You can have green tea though. 3. What is the cost. Click HERE for pricing. 4. What do I do after the cleanse? There is a maintenance guide that comes with the 3 day ...

Feelin'

Along with recipes, health tips and fitness moves, I want to share my journey mentally and emotionally too.  I am not certain though that people want to read it, but I do feel like people will understand me more and possibly can relate. Other than the physical transformations, I feel like more happens inside and I want to explore that.  I have always been an active kind of person, sports, running and outside "stuff." The thing that really kicked my ass was nutrition, I was so active that I thought I could eat and drink whatever I wanted! Like most of us~  I became a spin instructor at a small studio in Lake Oswego OR, loved it and still do! I def was not the skinniest of the bunch and I didnt really even care lol but after teaching 6-8 times a weak, I began to have NO ENERGY and my body was not changing.. Not cool when you are working out so much, right?!? After getting blood work done, I found of that I depleted my iron, thyroid, vit D and I had no cholesterol in ...
